Garlic, alium sativum, is neither a spice, herb, nor vegetable, but it can be used as all three. A member of the lily family, the garlic plant produces a pungent bulb that is composed of several cloves. Garlic has long been used as a food seasoning, and a medicine. Its juice contains the antibiotic oil, allicin. Garlic resembles the onion in size and growth habit, but its leaves have thin solid blades rather than tubular hollow blades of the onion. |
